FAMILY FAVOURITE GRANOLA BARK

This rececipe is to die for! Great in the morning with yogurt or milk and a perfect after school snack! Easy, delicious, nutritious!
Ingredients
2 3/4 cups rolled oats (optional: replace 1 cup with rolled quinoa)
1 cup shelled pistachios
1/3 cup raw pumpkin seeds
1 cup unsweetened coconut flakes (not shredded coconut)
3/4 cup dried sour cherries
1/2-1 tablespoon salt
1/2 cup coconut sugar
1/3 cup extra virgin olive oil
1/3 cup maple syrup, preferably Dark
Directions
Preheat oven to 300°F. Line a baking sheet with parchment paper.
In a medium bowl, mix together oats, pistachios, pumpkin seeds, coconut chips, dried sour cherries and salt.
In a microweavable measuring cup combine sugar, olive oil, and maple syrup. Heat and stir until sugar has dissolved completely. Pour over oat mixture.
Spread oat mixture in prepared 9 X 13-inch baking sheet (lined with parchement paper) and pat down to level. Bake until lightly golden, about 40 minutes.
